Why avocado oil and not olive oil?
I choose to use avocado oil because of the high heat I am using to broil the portobellos. The smoke point of avocado oil is 520 degrees F while extra virgin olive oil's is just 405 degrees F. This means that at higher temperatures avocado oil will hold up (retain its antioxidants and vitamins) better than olive oil which may give off toxic smoke when over-heated. Why Kerrygold Dubliner cheese?
I promise, I receive no benefit from mentioning this cheese. I only named it specifically because it is what I use most often. Just like Kerrygold butter the Paleo world is raving about, this cheese is made using milk from grass-fed cows. A well-priced alternative to hard-to-find local, grass fed cheese, Dubliner is an Irish cheese similar to cheddar, but with a scrummy "nutty to sharp to sweet" flavor. Yum. While I don't eat cheese too often, when I do I like to know that the ingredients used were cultivated in a holistic fashion.
